Over here I am getting ready to make tamales! My family only makes tamales for Christmas because it’s a ton of work. and actually I’ve never made them myself – I always just go over my Nana’s and help, but I wasn’t able to go this year.

Since I’m staying in California for Christmas this year I made a decision to start the tradition of making them with my lil mommy and brother (they don’t know they’re helping yet – but it takes a village to make tamales!).

First step: Make the meat that goes inside. Done.

While this cooked yesterday I went to my mom’s and hung out with my peeps. We worked in a little walk to justify all the goodies.

And I got into the Christmas spirit by watching home Alone.

My favorite tiny person came over too and I got a peek at the world’s cutest running shoes! (Okay, maybe they’re not so much ‘running’ shoes as ‘stumble around like a small drunk person shoes’ but you know what I mean.)

Now I have to get back to tamale prep. next step: make the masa!

This is going to be a very messy adventure – wish me luck!

(I took that picture on a cruise to Baja back when I thought it was okay to go to Mexico.)

Today I made green Chili Mushroom Enchiladas.

The filling:

1/2 c. onions

package sliced mushrooms

1 Tb. minced garlic

1 c. shredded cheese

The rest:

4 whole wheat tortillas

jar of green chili salsa (or green enchilada sauce)

shredded cheese

Directions: cook onions and garlic in a hot skillet with Tb. olive oil until tender. add mushrooms and small cans of green chilies. cook through.

Take one tortilla, spread 1/4 of the filling mixture and 1/4 of the cheese. gently roll up. Repeat with each tortilla.

Tip: using fresh tortilla will prevent breakage.

Pour salsa verde over the rolled enchiladas. top with cheese. Bake until cheese is melted and heated through.

I served it with refried black beans and roasted broccoli.

Wait! Something is missing!

Avocado. Ahhhhh. much better  

Don’t worry, if you didn’t find a sombrero…just pour yourself a margarita pina colada and call it a good time

Hello! Today we’re speaking about what to eat before you RUN. Do you have go-to food that always works for you?

Lately before running I’ve been sipping stimulate as well as snacking on grapes. I am consumed with grapes. Not just now – all the time. It’s my second preferred fruit after my preferred food of all time.

For long runs I do something like oatmeal or toast with Camiseta Sport Club Internacional PB as well as a banana. eventually it depends upon what I’m in the mood for as well as what I have around. Take a Snow walk

Church was a fail! When Ben and I pulled up the vehicle parking lot was empty!? We’re not registered members of this church so I’m sure they let people know somehow, but we were very surprised!

Despite the cold, it is very sunny today so we decided to take a walk. Ben and I strolled around for about an hour. It’s very pretty out, with everything dusted white (but it’s not growing on me :)).

We both thought it was so crazy how big these chunks of ice were! They were falling off a building right by the trail we were on – shouldn’t there be cones so people stay away?

So pretty! Cold, but pretty…

I thought eating a lot of nut butter with breakfast would keep me fuller longer, but nope – I was hungry within a few hours.  I was thinking about lunch on the way home and knew I wanted an apple, just wasn’t sure what to have it with…

I ended up heating up the peanut noodle leftovers and the last of my chickpea casserole. Yum! I usually “save” leftovers for dinner or give them to Ben. It was so nice to enjoy a dinner type meal in the middle of the day.

I had a dark chocolate square for dessert. I can seriously eat dark chocolate after every meal and snack.

Now I should go to the store to get some veggies, since we don’t have any in the house (except boring ol’ carrots), but I don’t feel like putting all my layers back on ?

Finger Licking good Friday

I was supposed to go to yoga today, but Ben’s friends are staying with us this weekend, (they’re in town for the wedding we’re going to tomorrow) and I don’t want them to know we live in shambles. So, I need to clean the house before hitting up my To-Do List.

Ben and I took a short walk to discuss this weekend’s agenda. It’s kinda crazy.

Ben hit up the shower when we got back and I hit up the kitchen to make breakfast.

Since I love bread and syrup I made Bagel thin French Toast.

Toppings included: pumpkin mixed with spices and stevia (heated), syrup Camiseta Borussia Monchengladbach and peanut butter. There was half a banana consumed at some point too.

I consider pumpkin a fall flavor, so it’s weird to be eating it now! no one tell the tree huggers I’m eating “out of season”.

This is why I don’t have any friends…

I usually only weigh myself once a month or so and today was that day. despite a Camiseta Barcelona very indulgent vacation and week of eating out I’m not up on the scale. I’m sure I owe God a favor now, but I’ll take it!(source)
